Oil free granola

 

Ingredients

 

Oats

Buckwheat flakes

Cocoa powder

1 tin of black beans

Coconut chips

Pumpkin seeds

Raisins

Can you make crunchy granola without adding oil? I was sceptical until I tried using black bean juice and it worked very well indeed.

Drain the black beans and use them in another recipe, what you want is the liquid. Add cocoa to the black bean juice and whisk. It may thicken it may not and for this recipe it doesn't matter.

Combine the cocoa black bean mix with the oats, buckwheat flakes and maple syrup and cook in the oven at 180 degrees C for about 25 minutes or until dry and crunchy. Stir a couple of times during cooking.

At the same time briefly toast the coconut chips for a few minutes in the oven on a separate tray. Be careful as they'll cook very quickly.

When it's all cooled combine with the raisins and pumpkin seeds and store in a glass jar.
