Potatoes
Salt
Chopped up Lemon
Thyme
Water
Chop the potatoes and add with all the other ingredients to a large jar. It's vitally important that the potatoes are covered by the water.
The perfect amount of salt is around 2% of the weight of the potatoes, so 2kg of potatoes would require 20g of salt. You can use a bit less but I wouldn't recommend using more as it may kill the bacteria.
Put the lid on and leave for 4 days. When you see some bubbles it should be ready.
Cook them just as you would normal potatoes. They make the best roast potatoes in the whole history of the world.
