Ingredients

250g Mushrooms (any kind)
5g Sea Salt

Fermented mushrooms can be somewhat of an acquired taste. I'm not terribly keen on the mushrooms themselves but the fermented juice that comes out of them can be quite amazing.

Freeze the mushrooms for at least 24 hours.
Let them thaw, combine with the salt and put into a jar.
Leave in a warm place and watch it ferment.

It won't take long. After a couple of days you'll see dark liquid emerging. Smell it, taste it and see what you think. The longer you leave it the funkier and stranger it becomes. I like it best after only a few days.
