Cashew cheese

 

Ingredients

Cashews

Sea Salt

Water

I've experimented with various nut cheeses and decided this is the only one I like. Keeping it simple tends to work best. It's not really like cheese but is very nice nonetheless.

Cover the cashews in water and soak overnight.

Add the salt and whizz it up into a smooth paste.

 

Put into a jar and leave to ferment in a warm place for a few days.
