Chilli sin carne

 

Ingredients

 

1 tin kidney beans or cooked black beans from previous recipe

1 tin plum tomatoes (not chopped as they're not as nice)

1 onion finely chopped

2 cloves garlic

1 fresh chilli

Smoked tofu

Oregano

Ground cumin

Ground coriander

Tabasco

Salt

Pepper

1 shot of espresso (optional)

Olive oil

I don't drink coffee these days but a tiny bit in this chilli will take it to another level and probably won't keep you awake at night.

 

Put some oil in a pan and heat gently. Add the Cumin and coriander and cook for 30 seconds. Add the onion and cook until softened then add the garlic and cook for another 5 minutes or so.

 

Add all the remaining ingredients except for the beans and simmer for 30 minutes. Add the beans and cook for another 10.

Serve with rice and guacamole.

Variation

Cut the Tofu into small chunks and roast in the oven with olive oil and soy sauce before adding to the chilli. Slightly less healthy but a lot better!
