1 tsp mustard
Really simple, nice and extremely healthy. Small younger nettles are best.
Using rubber gloves, remove the nettle leaves and discard the stalks. Wash the nettles and blanch in boiling water. Cool them down in cold water and drain.
Gently heat the olive oil and fry the onions until softened. Add the potatoes (peeled and chopped), some water, a pinch of salt and bring to the boil. Turn the heat down and simmer until the potatoes are cooked.
Add the nettles, mustard, pepper, another pinch of salt, if it needs it, and blend. Serve with a drizzle of olive oil and croutons.
