Cauliflower falafels

 

Ingredients

 

1 cup uncooked red lentils

1 small cauliflower

Half cup gram flour

Juice of 1 lime

2 tsp Ground cumin

2 tsp Ground coriander

1 tsp turmeric

Half tsp mustard seeds

Half tsp fennel seeds

1 tsp bicarbonate of soda

1 tsp salt

1 dessert spoon olive oil

Nothing authentic about these! After much experimentation I've come up with a recipe that doesn't require frying and is still delicious.

 

In a nutri bullet or spice grinder whiz up the lentils to make a course powder. Combine all the ingredients apart from the gram flour and blend (You'll need a little water as well).

 

Add the gram flour and mix. Spoon into balls (or as close as you can get) and arrange on a baking tray lined with parchment.

 

Cook in the oven for around 20 mins. Serve with tahini dressing and salad.
